Walk in the Saviors Footsteps

Don't forget our next Relief Society Meeting, January 21st. We have alot of fun activites planned to help us start the next year off right. Dr. Michael Johnson will be there to talk to us about finding the right kind of exercise shoe. We should all take care of ourselves, we don't need sore feet to go along with all those sore muscles. Sister Susan Gough will be there to teach us the art of couponing. I'm sure we can all think of better things to spend our money on. Sister Barbara Wiser has a Humanitarian project planned for us so that we can help others less fortunate that we are. We are in the service of our God when we serve others. We have an excellent dinner planned and as always it should be a whole lot of fun to get together and enjoy one another. Invite your neighbors and of course your Visiting Teaching ladies. We don't want anyone to miss out on this.

    2 lb pork Tenderloin
    1 1/2 cans Coca-cola Classic
    1 cup sugar
    1-7oz can Chipotle Chiles in Adobo Sauce
    1 tsp (heaping) dry ground mustard
    1 tsp (heaping)cumin
    1 tsp minced garlic
    Cut pork into 1" cubes.

    Drain Chiles into bowl reserving sauce.
    Use coke to wash the sauce out of the can.
    Using a strainer, wash the adobo sauce off of the chilies using the coke. (save as much sauce as possible. Do not use the chilies.)
    Add seasoning to sauce and whisk till smooth.
    Pour over meat in crockpot. Cook on low 12 hours. Done if it shreds when twisted with a fork.


    Cilantro-lime Rice
    1 cup rice
    2 cups water
    3 cubes chicken boullion
    1/2 tsp dried onion
    1/4 bunch cilantro
    1 Tbsp oil

    Cook as you would normal rice.
    Squeeze 3 limes over when done, then fluff with a fork.


    Creamy Tomatillo Ranch dressing

    1 envelope buttermilk ranch dressing
    1 cup milk 1 cup mayo
    1/2 bunch cilantro
    2 tomatillos
    1 serrano pepper (no seeds) mix in blender.

    Chill before serving. Serve all of the above in a tortilla with Black beans, lettuce, tomato, guacamole, olives, cheese, sour cream.
